What Do I Need to Make Delicious, Homemade & Creamy Pumpkin Soup Recipe?

You will Need: Bacon, Garlic, Scallion, carrots, nutmeg, thyme, Chicken stock, brown sugar, butter, non dairy sour cream, salt and pepper, Pepper mill, copper stock pot, cutting board, knife, apron, food processor or immersion blender, soup bowls, cloth napkin, silverware.

How Do I Make Delicious, Homemade & Creamy Pumpkin Soup Recipe?

Here is a recipe for homemade pumpkin soup:

Ingredients:

  • 15 oz. pumpkin purée, not pumpkin pie filling
  • 2 1/2 c. chicken stock or vegetable stock
  • 5 Slices of Bacon, cooked and crumbled
  • 1 Scallion, chopped
  • 1 clove Garlic, minced
  • 1 teaspoon Thyme
  • 1 teaspoon Nutmeg
  • Salt and Pepper
  • 1 cup Non-dairy Sour cream, full-fat coconut milk or almond milk. 

Instructions:

  1. Cook and crumble bacon.
  2. Remove bacon and set aside, saving bacon grease.
  3. Heat a large pot over medium-high heat. Add scallion and garlic and cook until softened, about 3 minutes.
  4. Add carrots, nutmeg and thyme- saute another 3 minutes.
  5. Stir in the pumpkin, broth, sour cream, salt, and pepper. Bring to a boil, on  medium-high heat, then reduce heat and simmer for 20 minutes.
  6. Let the soup cool slightly, then purée with an immersion blender or food processor until smooth..
  7. Serve hot.
  8. Garnish with sour cream, bacon and parsley.
  9. Enjoy!
