This simple recipe has just a few ingredients and it’s ready in no time. This grilled salmon with avocado mango salsa is easy, delicious, and healthy – the perfect summer meal!

For the Salmon, you will need Salmon, olive oil, salt and pepper.

For the salsa, you will need Roma tomatoes, mangoes, avocado, scallions, lime, cilantro and salt.

How to Make Grilled Salmon with Avocado Mango Salsa

I make the salsa first and set aside. It gives the flavors a chance to mingle. I dice my tomatoes into pretty small chunks.

Cutting up a mango can be a tough job, so I sometimes use frozen mangoes-I dice them into really small pieces as well. I dice the scallion very small-I don’t like getting a big chunk of onion in my salsa. Then, I chop the cilantro.

Toss it all in a bowl, then sprinkle on the lime and salt. Stir. Then I add the diced avocado. I add it last so that the avocado doesn’t get too soft.

You can use a full Salmon filet or smaller pieces of salmon. Drizzle with olive oil and season well with salt and pepper. You never want to over cook your salmon. I bake a large filet for about 15-20 minutes.

Ingredients
  

  • 4 Roma Tomatoes, diced
  • 1 c Mango, diced
  • 1 Lime, squeezed
  • 1 Scallion, finely chopped
  • 1 bunch Cilantro, chopped
  • Salt and Pepper to taste
  • 2 Avocado, diced
  • 1 Large Salmon filet
  • 1 T Olive oil

Instructions
 

  • In a medium bowl, add tomatoes, mango, lime, scallion and salt. Mix.
  • Add avocado. Mix.
  • Set aside to let flavors mingle.
  • Preheat oven to 350 degrees.
  • Place the salmon on a lined cookie sheet.
  • Drizzle with olive oil and season with salt and pepper.
  • Bake for 10-15 minutes.
  • Make sure not to overcook.
  • Serve Salmon with the Avocado Mango Salsa.
  • Enjoy!
