Oh my goodness, do I have a hearty and delicious recipe to share with you all today!

Creamy Corn chowder with fresh sweet corn, was always one of my favorite soups growing up, but I haven’t been able to enjoy it in years due to my gluten and dairy intolerances.

I’ve been experimenting in the kitchen, though, and I’ve finally developed a  great recipe for a gluten-free and dairy-free version that tastes even better than what I remember as a kid.

This creamy chowder is so hearty and comforting, packed with corn flavor and just the right amount of spice, you certainly won’t even miss the dairy or gluten.

I’m so excited to share this recipe with you.

But far too often, the soups laden with gluten and dairy are off-limits for those of us watching what we eat.

This corn chowder is packed with robust flavor from crispy bacon and spices, but contains no gluten, dairy.

With its sweet corn flavor and creamy texture, you’d never guess it was made without the usual suspects. So curl up with a big bowl of this nourishing soup.

I promise you’ll be amazed at how satisfying gluten-free and dairy-free doesn’t have to mean missing out on comfort food.

The first sip will have you exclaiming “mmm that’s good!” and craving seconds.  

And, it is the perfect combination with fresh corn muffins.  Yum!

What Do I Need to Make Hearty Gluten-Free and Dairy-Free Corn Chowder Recipe?

First off, gather your ingredients, which you may already have in your kitchen pantry.

You will need bacon, onion, celery, carrots, garlic gluten free flour, chicken broth, full fat coconut milk, frozen or fresh corn, Russet potatoes, Italian seasoning, cayenne pepper (optional) Salt & Black pepper.  

If you enjoy a spicy kick, you can add in some sliced jalapeños.

How to Make Hearty Gluten-Free and Dairy-Free Corn Chowder Recipe

Hearty Gluten-Free and Dairy-Free Corn Chowder Recipe

Get ready for an exciting and delicious culinary adventure as I walk you through how to make the perfect Hearty Gluten-Free and Dairy-Free Corn Chowder Recipe!  

The first step is to  prep your bacon (I use kitchen shears to make cutting it up easy) and add it to a large pot over medium-high heat.

Cook until crispy (about 10 minutes).

Once the bacon is crispy, take it out of the pot and remove to a paper towel lined plate.

Leave about 2 tablespoons of the bacon fat in the pot.

Add the onion, celery, and carrots to the pot and sauté for 5 minutes.

Stir in the garlic and cook for 30 seconds.

Stir in the flour and cook for about a minute, stirring nearly constantly.

Add in the chicken broth and give it a good stir to ensure the flour has dissolved and the brown bits are scraped up from the bottom of the pot.

Add in the cream, corn, potatoes, Italian seasoning, and most of the bacon (I save the rest for garnishing the bowls later on).

Increase the heat to high and bring the soup to a boil.

Once it’s boiling, reduce the heat to a rapid simmer so it’s gently boiling.

Cover the pot so the lid is slightly ajar.

Cook until the potatoes are tender (about 15-20 minutes).

Stir every so often.

The soup will thicken up more the longer you cook it. Season the soup with salt & pepper as needed.

Garnish bowls with the rest of the bacon.

You can use fresh minced garlic or garlic powder.

Fresh corn not in season, use frozen corn.

For a beautiful presentation- add a dollop of sour cream, fresh herbs, green onion or crispy bacon on your hot soup before serving.

What’s more, this recipe is versatile and can be adapted to any taste preferences and dietary restrictions.

You can add more vegetables like red bell pepper, or substitute chicken stock for vegetable broth.

Ingredients
  

  • 4 strips Bacon, cooked and crumbled
  • 1/2 medium Onion, diced
  • 3 stalks Celery, diced
  • 2 Carrots, peeled & diced
  • 1 T Garlic, minced
  • 1/4 c Bob's Red Mill 1:1 gluten free flour
  • 4 c Chicken stock
  • 1 c Coconut cream, full fat not sweetened
  • 4 c Corn, frozen or fresh
  • 2 Sweet potatoes, large, peeled & diced
  • 1/4 t Italian seasoning
  • 1 pinch Cayenne pepper (optional)
  • Salt & pepper to taste

Instructions
 

  • Prep your bacon (I use kitchen shears to make cutting it up easy) and add it to a large pot over medium-high heat. Cook until crispy (about 10 minutes). Once the bacon is crispy, remove to a paper towel lined plate.
  • Leave about 2 tablespoons of the bacon fat in the pot. Add the onion, celery, and carrots to the pot and sauté for 5 minutes.
  • Stir in the garlic and cook for 30 seconds. Stir in the flour and cook for about a minute, stirring nearly constantly.
