Hearty and Healthy Farro Salad
- 1 qt Chicken Stock
- 2 c Farro, rinsed
- 2 c Arugula
- 1 1/2 c Dried Apricots
- 2 c Chicken, cooked, diced
- 2 T Butter
- 1/2 c Pistachios
- 1/2 c Dried Cranberries
- 1/2 c Feta or Goat cheese
- Salt and Pepper to taste
- In a medium sauce pan, add chicken stock. Bring to a boil.
- Add farro. Return to a boil.
- Cover and simmer for 30 minutes.
- Add all other ingredients.
