What Do You Need to Make a Roasted Sweet Potato Salad?

You will need sweet potatoes, kale, apples, goat cheese, dried cranberries, maple syrup, apple cider vinegar and olive oil.
I don’t know about you, but I could really go for a big salad right now.
I’m talking something healthy, filling, and delicious.
Lucky for us, roasted sweet potato salad fits that description perfectly! Not only is this salad packed with nutritious ingredients, but it’s also super satisfying.

How Do I Make A Roasted Sweet Potato Salad?

I started by preheating my oven to 425 degrees.
Then I peeled (with this great peeler) and diced my sweet potatoes with this knife.

I added the diced potatoes to a 9x 13″ glass baking dish.
Then, drizzled them with olive oil and salt and pepper.
I baked them for 30 minutes.

Next, I chopped up the kale and added it to a beautiful salad bowl.

How to Make a Delicious Roasted Sweet Potato Salad
Ingredients
- 3 Small Sweet Potatoes, peeled and diced
- 2 Apples, diced
- 1/2 c Dried Cranberries
- 1/2 c Pecans
- 1/2 c Goat Cheese
- 1 T Olive Oil
- Salt and Pepper
Dressing Ingredients
- 3 T Apple Cider Vinegar
- 1/4 c Maple Syrup
- 1 T Dijon Mustard
- 1 clove Garlic, minced
- 1/3 c Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat oven to 425 degrees.
- Add diced sweet potatoes to a 9×13 baking dish.
- Add olive oil and salt and pepper. Mix.
- Bake for 30 minutes until tender. Let cool.
- Add Kale, apples, pecans, cranberries and goat cheese to salad bowl.
- When cool, add sweet potatoes.
Make Dressing
- in a small bowl, add apple cider vinegar, maple syrup, dijon mustard, garlic, olive oil, salt and pepper. Mix well.
- Pour dressing onto salad.
- Enjoy!
