How to make Creamy and Delicious Baked Potato Soup Recipe
- 3 medium Sweet potatoes, peeled and diced
- 1 1/2 T Gluten free flour
- 2 c Non dairy Milk
- 3 c Chicken Stock
- 1 T Dried Onion
- 1 t Garlic powder
- 2 containers non dairy Cream Cheese, I like the Tofutti brand
- 1/2 c Bacon, cooked and crumbled
- 1 c Non dairy Cheddar Cheese
- 2 T Non dairy Butter
- Salt and pepper to taste
- In a stock pot, add sweet potatoes and flour. Mix well.
- Cook over medium high heat.
- Add milk, chicken stock, onion and garlic. Stir well. Cook until potatoes are tender.
- Reduce heat to simmer.
- Add cream cheese, bacon, cheese butter, salt and pepper.
- Simmer for 20-30 minutes.
- Top with fresh chives.
