How to Make Delicious Acorn Squash Recipe

Welcome! I am so glad that you are here. I always enjoy our time together. It’s so hard to believe that we have already celebrated Thanksgiving and are quickly headed to Christmas. Did you get your Christmas tree yet? Is it decorated? I still have two more trees that I will be putting up, so my house is packed with buckets of ornaments, garlands, twinkle lights and so much more. This is such a busy season-there is just so much to do. I hate having to come up with wonderful dinner ideas each night, so here is a bit of help. I have the best acorn squash recipe for you-it’s so easy and delicious. One less thing that you have to worry about. I’m sharing how to make delicious acorn squash recipe with you today.

The Best Acorn Squash Recipe, Ever!


Just a few simple ingredients-Acorn Squash, an Apple, Walnuts, Brown Sugar, Dried Cranberries, Butter, Cinnamon and Maple Syrup. Doesn’t this sound like the perfect side dish for autumn or winter? You are going to love this recipe.

Step 1: Cutting an acorn squash can be tough. Place squash on a cutting board. Using a sharp knife, cut acorn squash in half and scoop out seeds. Cut off a bit of the bottom of the squash so that it will sit flat in the baking dish.

Step 2: Place acorn squash in baking dish. Using a fork, poke holes into the flesh of the squash. Put a 1/2 T of butter and divide a 1/4 c. brown sugar into each half.
Step 3: Place in 400 degree oven for 35 minutes.

The Apple Stuffing

Step 3: While the acorn squash is baking, core and dice the apple and chop the walnuts. I use a nut grinder like this to chop walnuts-it reminds me of my mom and grandma cooking, but you can get a much more modern one here.

Step 4: Put 1 T of butter in a frying pan on medium heat. Add apples, cranberries, 1/4 c. brown sugar, walnuts and cinnamon. Cook until apples are soft and golden. This smells divine. I use an Olive wood spoon when cooking-I find them much that a regular wooden spoon.

Step 5: After squash has cooked about 35 minutes, remove from oven and fill the squash with the stuffing mixture, Pop it back into the oven until the squash is fork tender.
Step 6: Drizzle squash with maple syrup.

Step 7: Enjoy! Your friends and family will love this recipe. It’s a perfect side dish on chilly nights and beautiful enough to serve for your holiday entertaining.

Delicious Stuffed Acorn Squash
Ingredients
- 1 Large Acorn Squash
- 1 Apple
- 1/4 c. Walnuts
- 1/2 c. Brown Sugar, divided
- 1/4 c. Dried Cranberries
- 2 T. Butter, divided
- Dash Cinnamon
- Maple Syrup
Directions
- Preheat oven to 400 degrees.
- Cut squash in half and remove seeds. Trim a bit off of the bottom, so that the squash will sit flat.
- Place squash in a baking dish , add 1/2 T butter and 1/8 c. of brown sugar in each half.
- Bake for 35 minutes.
- While squash is baking, core and dice apple and chop walnuts.
- In a pan over medium heat, add 1 T. butter, apple, walnuts, 1/4 c brown sugar, cranberries and cinnamon. Cook until apples are tender and golden.
- Remove squash from oven. Fill with apple stuffing.
- Bake squash and additional 15-25 more minutes, until squash is fork tender.
- Drizzle with maple syrup.
- Enjoy!
