To make this recipe even easier, I use shredded carrots.
TIP: I don’t use a lot of celery. So when I buy the pack of celery and only use a couple of stalks, I dice the entire package and freeze in in small ziploc bags. The next time that I need diced celery, I just pull it out of the freezer. No more wating celery.

Creamy Tuscan Sausage and Bean Soup
- 1 lb Italian Sausage
- 1/2 Onion, chopped
- 3 cloves Garlic, minced
- 4 14 oz cans White Beans (cannellini), drained
- 4 c Chicken Broth
- 1 dash Italian Seasoning
- 2 ribs Celery, diced
- 1 c Carrots, shredded
- 1 8 oz pkg cream cheese
- Salt & Pepper to taste
- Add oil, onion and garlic to a stock pot over medium heat. Cook until aromatic.
- Add sausage. Cook until crumbled. Drain if necessary.
- Add the beans, chicken broth, Italian seasoning, carrots and celery. Bring to a boil.
- Using a masher, mash some of the beans. I like to leave some beans whole. The soup will thicken a bit more as it cooks. Mashing the beans makes the soup creamier. Simmer for 25 minutes.
- Add cream cheese. Salt and pepper to taste.
- Serve immediately.
