To make this recipe even easier, I use shredded carrots.

Using a sharp knife, dice your celery, onions and garlic on a cutting board.

TIP: I don’t use a lot of celery. So when I buy the pack of celery and only use a couple of stalks, I dice the entire package and freeze in in small ziploc bags. The next time that I need diced celery, I just pull it out of the freezer. No more wating celery.

Using a can opener, open your cans of beans and drain them in a strainer.

In A stock pot over medium heat, add olive oil, garlic and onions.

Saute until aromatic.

Then add sausage and cook until sausage crumbles.

Drain any grease.

Then add carrots, celery, beans seasoning and chicken stock.

When vegetables are tender, mash some of the beans.

This makes the soup creamy.

Then add in the cream cheese.

I’m dairy free, so I use non-dairy cream cheese.

Cook Time 40 minutes

Servings 6 Servings

Ingredients
  

  • 1 lb Italian Sausage 
  • 1/2 Onion, chopped
  • 3 cloves Garlic, minced
  • 4 14 oz cans  White Beans (cannellini), drained
  • 4 c Chicken Broth
  • 1 dash Italian Seasoning
  • 2 ribs Celery, diced
  • 1 c Carrots, shredded 
  • 1 8 oz pkg cream cheese
  • Salt & Pepper to taste

Instructions
 

  • Add oil, onion and garlic to a stock pot over medium heat. Cook until aromatic.
  • Add sausage. Cook until crumbled. Drain if necessary.
  • Add the beans, chicken broth, Italian seasoning, carrots and celery. Bring to a boil.
  • Using a masher, mash some of the beans. I like to leave some beans whole. The soup will thicken a bit more as it cooks. Mashing the beans makes the soup creamier. Simmer for 25 minutes.
  • Add cream cheese. Salt and pepper to taste.
  • Serve immediately.
  • Enjoy!
