Step 3: Next, I layered the sliced sweet potatoes into a baking dish.

Step 4: Next, I made the creamy sauce.
In a medium sized sauce pan, I added the ingredients whisking the cream sauce constantly so that the sauce doesn’t stick.

Delicious Garlic Butter Scalloped Sweet Potatoes
Ingredients
- 4 Large Golden Sweet Potatoes, peeled and sliced
- 1 13.5 oz can Coconut Cream, non sweet
- 6 T Butter or non dairy butter
- 1 t Garlic, minced
- 1 1/2 t Herbs de Provence
- 1 t Arrowroot powder or constarch
- 1 c Bacon, cooked and crumbled
- Salt and Pepper
- Chives
Instructions
- Preheat oven to 400 degrees.
- Layer sliced sweet potatoes in a buttered baking dish.
- Sprinkled bacon over sweet potatoes.
- In a medium sauce pan over medium heat, add coconut cream, butter, garlic, herbs de Provence, and salt and pepper. Heat until warm throughout.
- In a small bowl, add arrowroot powder and a small amout of water and mix well. Add to the cream sauce and stir until thickened.
- Sprinkle with chives.
- Bake for 40-50 minutes. Until sweet potatoes are tender.
- Enjoy!
