In a large mixing bowl, add gluten free pancake mix.
You can follow the package directions, but, I always like to add a few special touches.
I like using applesauce instead of oil.
I also add vanilla and cinnamon, as well as, loads of fresh blueberries.
The more blueberries the better.

Mix well.
Then add the batter into a buttered oven proof frying pan.
Bake for 45 minutes, checking regularly, as cooking time will vary.
The hardest part of this recipe is the waiting-it will be so hard to resist the amazing aroma as it cooks.

If you want to, you can mix it up the night before, then bake it in the morning.

Delicious Baked Blueberry Pancakes
Ingredients
- 2 c Blueberries
- 2 Eggs
- 1 T Vanilla
- 1/4 c. Applesauce
- 2 c Bob's Red Mill Gluten Free Pancake Mix
- 1/2 c non dairy milk, may need more depending on the desired consistency.
- 1/4 t Cinnamon
- Butter or non dairy butter
- Maple syrup
Instructions
- Preheat oven to 350 degrees.
- Butter a large frying pan.
- Mix eggs, Bob's Red Mill Gluten Free Pancake Mix, applesauce, cinnamon, vanilla. Mix well.
- Add blueberries. Mix.
- Pour batter into frying pan.
- Bake for 45 minutes, checking regularly, as baking times will vary.
- Serve warm with butter and syrup.
- Enjoy!
