Egg Salad Sandwiches

Egg Salad Sandwiches are delicious for anytime, but especially fun for a tea party. They are so easy to make and only use a few ingredients.

Ingredients
  

  • 9 Eggs, hard-boiled – peeled and diced
  • 1 cup Mayonnaise
  • ⅓  cup Dijon Mustard
  • 1 T Minced Garlic
  • Salt and Pepper, to taste
  • 8 slices Bread, remove crust

Instructions
 

  • Combine the eggs, mayonnaise, mustard, minced garlic, salt and pepper in a large bowl.
  • Mix well.
  • Once fully combined, refrigerate until ready to serve.
  • Spread egg salad to a slice of bread. Cover with a second slice of bread. Cut in half longwise.

Cucumber Mint Sandwiches

Traditional English Tea Sandwich Recipe

Ingredients
  

  • 12 slices White Bread
  • 1 English cucumber
  • 8 ounces Cream Cheese, softened
  • 1/4 cup Mayonnaise
  • 2 T Fresh Dill, minced
  • 1 T Lemon Juice
  • 1/4 t Garlic Powder
  • 1/4 t Salt

Instructions
 

  • In small mixing bowl, combine softened cream cheese, mayo, dill, lemon juice, garlic powder, and salt.
  • Mix well.
  • Peel and slice the cucumber into strips using a vegetable peeler.
  • Cut the crust off of the bread to make squares.
  • For each sandwich, spread about 1 tablespoon of cream cheese filling onto each piece of bread.
  • Add thinly sliced cucumbers, fresh cracked pepper and additional fresh dill.
  • Place the second piece of bread on top, then carefully cut them in half and then half again, creating fingers.

How to Keep a Cucumber Sandwich from Getting Soggy?

1. Use English cucumbers, which have less water content than other cucumbers.

2. Sprinkle the sliced cucumbers with salt and place them on paper towels to allow any additional moisture to drain before adding them to the sandwiches.

3. Spread butter on both pieces of bread to create a barrier between the cucumbers and the bread.

Ingredients
  

  • 8 ounces Cream Cheese, softened
  • 1/4 cup Mayonnaise
  • 2 T Fresh Dill, minced
  • 1 T Lemon Juice
  • 1/4 t Garlic Powder

  • 1 package Smoked Salmon

  • 1 cup Chicken, cooked and diced
  • 1/4 cup Pecans, diced
  • 6 Strawberries, large-diced
  • 1 T Fresh Chives, chopped
  • 1 T Dijon Mustard
  • 1/2 cup Mayonnaise
  • Salt and Pepper, to taste
  • 8 slices White Bread, remove crusts

Instructions
 

  • In a medium mixing bowl, add all ingredients except bread.
  • Mix well.
  • Add chicken salad on one slice of bread. Top with a second slice of bread.
  • Cut in half, then half again-creating fingers.
