How to Make Healthy and Hearty Sausage and Veggie Soup

I am so glad that you are here. I so enjoy our time together. Don’t you just love Fall? I’m so enjoying this cooler weather after a very long and hot summer. I love hearty soups and comfort foods, especially if it is a quick and easy recipe. Today, I’m sharing one of my very favorite recipes and showing you how to make Healthy and Hearty Sausage and Veggie Soup. Come on, I’ll show you how.

If you are looking for quick and easy delicious hearty and healthy dinner ideas, you have definitely come to the right place. And it’s perfect for these cooler nights during Leaf peeping season, and the best part is this soup is a one pot meal, you won’t have a ton of cleanup, which is great after a busy day.

I love this recipe for many reasons, one- I can make it quickly, two- there is very little cleanup, three-it’s full of vegetables. Feel free to add the vegetables that you like best, you don’t have to stick to the recipe.
I make a large batch of soup and it lasts me for days. I cook this soup in a large stock pot, here are several options-here, here, here and here.
I add a drizzle of olive oil to the stock pot and add the sausage, onion and garlic. I use my potato masher to break up the meat. After the sausage is cooked, I add the shredded carrots. Shredding carrots in my food processer is so quick and easy.
While the carrots cook down, I dice my zucchini and yellow squash on a cutting board. This knife is amazing for chopping vegetables.

Next, I add the squash, tomatoes, chicken stock and seasonings. I let it simmer for a half hour. And that’s it! This recipe truly is so simple.

Healthy and Hearty Sausage and Veggie Soup
Ingredients
- 1 T. Olive oil
- 1/2 Onion, diced
- 1 clove Garlic, minced
- 1 lb. Sausage
- 4 Carrots, shredded
- 1 Zucchini, diced
- 1 Yellow Squash, diced
- 3 c. Stewed Tomatoes or Marinara Sauce
- 4 c. Chicken Stock
- 1 1/2 t. Italian Seasoning
Directions
- Over medium heat, add olive oil, garlic and onion. Saute’ for 5 minutes, then add sausage. Cook until meat is no long pink.
- Add Carrots, until just tender.
- Add squash, tomatoes, chicken stock and seasonings.
- Let simmer for at least a half hour.
- Enjoy!
