You are going to love this healthy and delicious recipe. It is full of great flavor. I serve this over rice This recipe is gluten free and dairy free, if you use a butter substitute, without losing any of the flavor. It’s only four easy steps and it’s a healthier than the honey walnut shrimp from Panda Express. Traditionally, Honey Walnut Shrimp is made with Sweetened condensed milk, this quick and easy recipe doesn’t use it.

I LOVE great food, but I don’t like complicated recipes or spending loads of time in the kitchen. I love a healthy and delicious recipe that is easy-you are going to love it. And it doesn’t take loads of ingredients. Did I mention that this recipe is gluten free and dairy free?

Here are the ingredients that you will need for this delicious recipe-Shrimp, walnuts, salt and pepper, sugar, eggs, cornstarch or arrowroot powder, olive oil, mayonnaise, honey, heavy cream or coconut cream, green onions. Yum!

Step 1: In a small saucepan over medium heat, combine sugar and water. Heat to a boil. Add walnuts and let boil for 2 minutes. Using a slotted spoon, remove walnuts and let cool.

Step 2: Pat shrimp dry with a paper towel. Season with salt and pepper. Place eggs in a shallow dish. Add cornstarch (for gluten free, use arrowroot powder)to another shallow dish-add salt and pepper. Dip shrimp in eggs, then into the cornstarch to coat well.
Step 3: In a large skillet over medium heat, add oil. When oil is hot, add shrimp in batches and fry on both sides until golden brown-3 to 4 minutes. Remove with a slotted spoon and place on a paper towel lined plate.

Step 4: In a medium bowl, whisk together, mayonnaise, honey and heavy cream (for dairy free-use the solid part of coconut cream). Toss shrimp into sauce and add sugar glazed walnuts. Sprinkle with green onions or parsley.
