The night before, create the rub.

It’s one and a half cups of brown sugar to a bottle of McCormicks smokehouse maple seasoning.

The total amount of the rub depends on how big the pork shoulder you’re using.

We used 9 pounds of pork shoulder, 4 1/2 c. of brown sugar, three bottles of seasoning.

Liberally apply the rub to all sides of the pork.

Place in fridge overnight with apple juice about halfway up the pork shoulder.

If you are new here, welcome.

Let the pork shoulder come to room temperature.

Preheat the smoker to 220 degrees.

We used a Traeger smoker.

Place the pork in the smoker and cook until internal temperature is 165 to 185.

The cooking time is intentionally slow and can take anywhere from 8 to 12 hours.

We put our smoker on a picnic table outside.
