The first time that I made them, I fell head over heels in love with them.

What Do I Need to Make the Most Delicious Smashed Potatoes?

If you love french fries, you are going to love this easy potato recipe.

The recipe is super easy, and the result is so delicious that everyone at your table will beg for more.

All you need are some potatoes, extra virgin olive oil, butter, salt, pepper, rosemary and garlic.

And with just a few steps, you’ll have crispy-on-the-outside and fluffy-on-the-inside potatoes that will make your mouth water.

You want to use smaller potatoes, like baby potatoes, Yukon Golds, new potatoes, yellow potatoes, to make it easy to smash them with the bottom of a glass.  

Larger potatoes don’t work as well.

How to Make the Most Delicious Smashed Potatoes

Place the potatoes in a large pot and fill with cold water.  

You want to have enough water to cover the potatoes.

Cooking the potatoes in salted water or chicken stock adds even more flavor.  

Place on medium-high heat until boiling.

Boil for about 20 minutes or until the potatoes are soft and fork tender.  

Cooking time will vary-small potatoes won’t take as long to cook.

Drain potatoes and let them sit for a few minutes.

Get a large sheet pan ready- add parchment paper or a silicon mat onto the large baking sheet.

Place the potatoes on the baking sheet and press on each one with the bottom of a glass to “smash” them.

Being careful not to push too hard.

Drizzle the potatoes with melted butter and extra-virgin olive oil.

Sprinkle with salt and black pepper.

You can also add garlic powder or fresh garlic, kosher salt, onion powder or sprinkle of fresh herbs.

Ingredients
  

  • 1 lb Petite Yukon Gold or FIngerling Potatoes
  • 3 T Salted Butter, melted
  • 3 T  Extra-Virgin Olive Oil
  • Salt and pepper
  • 1 t Garlic powder
  • 1 T Fresh Rosemary, chopped

Instructions
 

  • Place the potatoes in a large pot and fill with water. Place on high heat until boiling.
  • Boil for about 20-25 minutes or until the potatoes are soft and fork-tender. You want them to be soft enough to smash! The larger the potatoes, the longer the cooking time.
  • Preheat oven to 425 degrees. Drain the water and place the potatoes in a colander to allow the steam to release for about 5 minutes. 
  • Get a large baking sheet ready. Place the potatoes on the baking sheet and press on each one with the bottom of a glass to "smash" them.
  • Drizzle the potatoes with melted salted butter and extra-virgin olive oil. Sprinkle with salt, pepper and garlic. 
  • Bake in a 425-degree oven for about 35-45 minutes, depending on the level of desired crispiness. 
  • Serve as a side dish or Sprinkle with bacon, a dollop of sour cream and fresh chives as an appetizer.
