How to Make Perfect Spring Breakfast- Eggs in Baked Hash Brown Nests

  1. Preheat your oven temperature to 350 degrees. While the oven is preheating, prepare your muffin pan by spraying each cup with cooking spray or brushing with melted butter or olive oil.

2. Thaw the frozen grated potatoes according to the package instructions. Once thawed, place them in a bowl and season with the egg, salt and pepper to taste.

3. Mix well to ensure the seasoning is evenly distributed.

4. Divide the seasoned hash brown potatoes evenly among the muffin tin cups, pressing them firmly into the bottom and up the sides to create nests.

5. Bake the hash brown cups in the preheated oven for about 20-30 minutes, or until they are golden brown and crispy around the edges.

While the hash brown nests are baking, peel and halve the hard-boiled eggs lengthwise. Once the nests are ready, carefully place one half of a hard-boiled egg on top of the hash browns nest, pressing it down slightly to secure it in place.Return the muffin tin to the oven and bake for an additional 5-7 minutes, or until the eggs are heated through.

Once the eggs are heated through, remove the muffin tin from the oven and let cool for a few minutes before carefully removing the hash brown nests from the tin.

Serve the Eggs in Baked Hash Brown Nests warm, garnished with fresh herbs or a sprinkle of cheese if desired.

Enjoy the delicious combination of crispy hash browns and creamy eggs for a perfect spring breakfast!

I used ramekins, thinking that it would be a great idea to create individual servings.

I thought that they would look so cute.

However, the hash browns just didn’t get as crispy as I like them.

So next time, I will use a muffin pan.

Also, all I had was large eggs, smaller eggs would have fit into the nests better.

Oh my word the littles would lose it in the best possible way if I made these nests for them. They love hashbrowns but I never thought to add an egg. This is almost too cute to eat. I can't wait to surpise them! Big hugs, CoCo
