With the continued social distancing restrictions, our New Years Eve celebration will be much different this year. It was just my husband and I at home, making dinner together and watching the ball drop. We lived on the east coast for many years, now that we are back on the west coast, we still choose to watch the ball drop on east coast time so that we don't have to stay up so late.
My favorite part of New Years Eve is that at Midnight, or in our case, 9:00, we kiss each other and then dance around the family room.
This year, we are made Crab Cakes for dinner. Yum!
We had some amazing crab claws. We took the crab claws, a table and a hammer out to the garage. We turned on some music and began to harvest our crab meat.
We have been gluten free and dairy free for about a year now, so I came up with this recipe. It is delicious!
Gluten Free/Dairy Free Crab Cakes
4 T. Mayonnaise
2 Eggs, lightly beaten
1 T. Dijon Mustard
Salt and Pepper
2 T. Chives
1 T. A-1 Steak Sauce
1 1/2 T. Old Bay Seasoning
1/2 c. Finely chopped gluten free crackers, I used Nut Thins
6 c. Fresh Crab Meat
In a large bowl, add all ingredients except the crackers and crab, mix well.
Then add the crackers and crab, mix.
Chill mixture for 30 minutes.
Heat oil in pan. Make patties with the crab mixture. Fry crab cakes until crispy. Place on plate with a paper towel to soak up and oil.
We had a wonderful salad, as well. Our salad was a combination of fresh spinach leaves, avocado, fresh raspberries, pistachio nuts, dried cranberries. I make my own salad dressing-this dressing is made from a raspberry balsamic vinegar and a lemon olive oil.
