What Do I Need for Pumpkin Cake with Maple Glaze?

I’m gluten free and dairy free, so I used Bob’s Red Mill Gluten free flour, but you can replace the gluten free flour with all purpose flour-using the same amount.
You will need: pumpkin puree, gluten free flour, baking powder, pumpkin pie spice, salt, baking soda, butter, brown sugar, eggs, vanilla extract, maple syrup, confectioners’ sugar, cinnamon sticks, mini bundt pans, hot pads, cooling rack, Cake stand, cake server, Dessert plates, cloth napkins and silverware.
Step 3: In a large bowl, combine flour, baking powder, pumpkin pie spice, salt and baking soda.
Step 4: In the bowl of a stand mixer, beat butter and sugar on medium-high until well combined, about 1-2 minutes. Beat in eggs, one at a time, until well combined. Beat in pumpkin and vanilla (click to see how to make homemade vanilla) until just combined. Gradually add flour mixture to sugar mixture at low speed, beating just until incorporated.

Step 6: While the cakes are baking, make the glaze. Heat maple syrup in a small saucepan over medium heat until reduced to 1/2 cup, about 5 minutes. Whisk in butter, vanilla and salt until the butter has melted. Whisk in confectioners’ sugar until smooth.
Step 7: When the cakes are done, cool for 10 minutes. Then turn one cake upside down and add a tablespoon of maple glaze. Then add another cake, upside right on top of the glaze. Repeat with remaining cakes.
Step 8: Drizzle glaze on all pumpkin cakes. Stick a cinnamon stick in the top for a pumpkin stem. Add a mint leaf.
Step 9: Serve warm with a dollop of ice cream.

Pumpkin Cake with Maple Glaze
Ingredients
- 2 c 2 cups all-purpose flour or Bob's Red Mill Gluten Free Flour
- 1 1/2 t baking
- 1 1/2 t pumpkin pie spice
- 1/4 t salt
- 1/4 t baking soda
- 1/2 c butter, melted
- 1 c brown sugar, packed
- 2 large eggs
- 1 c canned pumpkin puree
- 2 t vanilla extract
MAPLE GLAZE
- 3/4 c maple syrup
- 1 1/2 T butter
- 1 t vanilla extract
- 1/4 t salt
- 1/4 c confectioners' sugar
Instructions

Beat in pumpkin and vanilla until just combined. Gradually add flour mixture to sugar mixture at low speed, beating just until incorporated.
