Welcome! I am so glad that you are here. I always enjoy our time together. Are your mornings crazy busy? Are you running out the door without breakfast? I have the best recipe for you. It is easy and delicious. You can make it ahead of time, then grab and go in the morning. Today, I am sharing The Best Bacon and Mushroom Egg Bites Recipe. Come on, I’ll show you.

Do you love the egg bites from Starbucks? Me, too. They are so tasty and healthy. The perfect snack for any time of day, but especially wonderful on those busy mornings. And the best part is that everyone in the family will love them. I will make up a batch on Sunday afternoon. I put them into the refrigerator and they last me for days. I use whatever protein and veggies that I have in the fridge. This recipe is so versatile.

Are Egg Bites Healthy?

Definitely! I love easy breakfast ideas, especially when you are on the go. These egg bites are just like Starbucks, but better. You can make them gluten free and dairy free. They are oven baked and as easy to eat as a muffin. You can customize them to your taste. They are the perfect healthy snack any time of the day.

Here are the ingredients that you will need for this delicious recipe- Eggs, heavy cream or non dairy cream, a protein, cheese and veggies. I happened to have bacon, mushroom and chives so that’s what I used. I also love using sausage, cheese and spinach. You can get super creative. It all tastes amazing.

Step 1: Cook and crumble bacon. Using a sharp knife, chop chives and mushrooms.

Step 2: In a medium mixing bowl or batter bowl, I love using a batter bowl because of the handle makes it easy to hold on to when beating the eggs. Add eggs, cream or dairy free yogurt and whisk until eggs and yogurt are well combined.

Step 3: Add bacon, eggs, chives and mushrooms. I am dairy free, so I used non dairy cheese from Daiya. Salt and pepper.

Step 4: Butter a muffin pan, pour egg batter into each cup. Bake at 350 degrees.

Can you Freeze Egg Bites?

Yes! These are perfect for freezing. Make sure to defrost them before heating them in the microwave, or they may become rubbery. And nobody likes rubbery eggs.

You can sprinkle a bit of cheese on top half way through the baking time. Isn’t that so easy? I love that you can have really great tasting food that is healthy and gluten and dairy free, on the go.

The Best Bacon and Mushroom Egg Bites Recipe

Serving Size:12 Time:50 minutes Difficulty:Easy

Ingredients

  • Butter
  • 9 Eggs, beaten
  • 1 c. diced veggies-mushrooms, broccoli, peppers-whatever you have on hand
  • 1/2 cheese or dairy free cheese
  • 1/2 bacon, sausage or ham-cooked and diced
  • 1/4 c. Heavy cream or non dairy yogurt
  • Chives
  • Salt and Pepper

Directions:

  1. Preheat oven to 350 degrees.
  2. Butter muffin pan.
  3. Dice meat, veggies and chives.
  4. Mix all ingredients in a large batter bowl.
  5. Pour mixture into muffin pan.
  6. Bake for 35-40 minutes. Until golden brown.
  7. Enjoy!
