Especially if you are looking for a new chicken recipe? Sometimes it is so hard to come up with a great way to cook chicken. It’s easy to get into a rut and cook the same thing over and over again. This is a wonderful recipe that you are going to love and it is quick, easy and delicious. Today, I am showing you How to Make The Best Chicken with Balsamic Tomato and Herb Recipe. It is perfect for a busy week night dinner or for serving to company.. Come on, I’ll show you.

You are going to love this healthy and delicious recipe. It is chock full of veggies and flavor. I serve this over spaghetti squash-it is an amazing combination-but you can serve it over pasta as well. This recipe is gluten free and dairy free, if you use a butter substitute, without losing any of the flavor.

I LOVE great food, but I don’t like complicated recipes or spending loads of time in the kitchen. I love a healthy and delicious recipe that is easy-you are going to love it. And it doesn’t take loads of ingredients. Did I mention that this recipe is gluten free and dairy free?

Here are the ingredients that you will need for this delicious recipe. The flavors are so classic and it’s the perfect comfort food. Chicken breast, Spaghetti Squash or pasta, Roma tomatoes, Herbs de Provence or Italian Seasoning, Garlic, Balsamic Vinegar, Italian Parsley, Chives, Butter and Salt and Pepper. Yum!

Step 1: Preheat oven to 400 degrees.

Step 2: Using a sharp knife, Cut the spaghetti squash in half. Scoop out the Inside of the squash, Poke holes all over the inside of the squash with a fork.

Step 3: Place spaghetti squash halves face don on a lined cookie sheet. Bake for 40-50 minutes.

Step 4: Add a drizzle of olive oil in a large frying pan. Season chicken breast with salt and pepper. Add to the frying pan. Cook for 3-4 minutes on each side. Longer if chicken breasts are thick. Remove chicken from pan and set aside. Slice chicken after it rests for five minutes.

Step 5: Dice tomatoes. Mince garlic. Chop herbs.

Step 6: In the same pan that you cooked the chicken in, add another drizzle of olive oil, if needed. Add in garlic, saute for one minute. Add in tomatoes, Italian seasoning, balsamic vinegar. Cook until tomatoes soften. Add in herbs and season with salt and pepper.

Step 7. After Spaghetti squash is cooked and cooled a bit. Use a fork and scrape out the inside of the squash. Add buter, salt and pepper.

To serve: Place spaghetti squash or pasta on a serving plate, top with sliced chicken and balsamic tomatoes. Enjoy!

The Best Chicken with Balsamic Tomato and Herb Recipe

Ingredients

  • 4 Chicken breasts
  • Spaghetti Squash or pasta,
  • 2 Roma tomatoes, diced
  • 1 T. Herbs de Provence or Italian Seasoning
  • 1 1/2 t. minced Garlic
  • 1 1/2 T. Balsamic Vinegar
  • 1 T. fresh Italian Parsley
  • 1/2 T. Fresh Chives
  • 2 T. Butter or butter substitute
  • Salt and Pepper to taste

Directions

  1. Preheat oven to 400 degrees.
  2. Halve spaghetti squash. Scoop out seeds. Poke holes into the flesh with a fork.
  3. Place squash face down on a lined cookie sheet. Bake for 40-50 minutes.
  4. Add a drizzle of olive oil in a large frying pan. Season chicken breasts with salt and pepper. Cook chicken for 3-4 minutes per side. Remove chicken from pan. Let sit for five minutes. Slice chicken breasts.
  5. In the same pan, add another drizzle of olive oil. Saute garlic for one minute. Add tomatoes, Italian seasoning, balsamic vinegar, herbs, salt and pepper.
  6. When spaghetti squash has cooled, scoop out squash. Add butter and salt and pepper.
  7. Enjoy!
