Step 4: Add a drizzle of olive oil in a large frying pan. Season chicken breast with salt and pepper. Add to the frying pan. Cook for 3-4 minutes on each side. Longer if chicken breasts are thick. Remove chicken from pan and set aside. Slice chicken after it rests for five minutes.

This recipe was so delicious, it may just be the best chicken dish I've ever made! Perfect for a quick weeknight dinner.
This is the best chicken dish. It takes a little time, but your family will love it! Serve over spaghetti squash for a healthy meal.
Prep Time 15 minutes
Cook Time 40 minutes
Course Main Course
Cuisine Italian
Servings 4 Servings

Ingredients
  

  • 4 Chicken breasts
  • Spaghetti Squash or pasta,
  • 2 Roma tomatoes, diced
  • 1 T Herbs de Provence or Italian Seasoning
  • 1 1/2 t minced Garlic
  • 1 1/2 T Balsamic Vinegar
  • 1 T fresh Italian Parsley
  • 1/2 T Fresh Chives
  • 2 T Butter or butter substitute
  • Salt and Pepper to taste

Instructions
 

  • Preheat oven to 400 degrees.
  • Halve spaghetti squash. Scoop out seeds. Poke holes into the flesh with a fork. Place squash face down on a lined cookie sheet. Bake for 40-50 minutes.
  • Add a drizzle of olive oil in a large frying pan.
  • Season chicken breasts with salt and pepper. Cook chicken for 3-4 minutes per side. Remove chicken from pan. Let sit for five minutes. Slice chicken breasts.
  • In the same pan, add another drizzle of olive oil. Saute garlic for one minute. Add tomatoes, Italian seasoning, balsamic vinegar, herbs, salt and pepper.
  • When spaghetti squash has cooled, scoop out squash. Add butter and salt and pepper.
  • Enjoy!
