Ingredients:

– 2 c Blueberries – 2 Eggs – 1 T Vanilla – 1/4 c. Applesauce – 2 c Bob's Red Mill Gluten Free Pancake Mix – 1/2 c non dairy milk, may need more depending on the desired consistency. – 1/4 t Cinnamon – Butter or non dairy butter – Maple syrup

1. Preheat oven to 350 degrees and butter a large frying pan.

2. Mix eggs, Bob's Red Mill Gluten Free Pancake Mix, applesauce, cinnamon, vanilla. Mix well.
