The Best Summer Shrimp Salad Recipe
This light and refreshing summer shrimp salad is perfect for outdoor dining. It’s healthy, delicious, and easy to make!

- 3 c Arugula
- 2 c Shrimp, diced
- 1 c Grapes, cut in half
- 1 Avocado, diced
- 1/2 c Pumpkin Seeds
- 1 15 oz can Hearts of Palm, sliced
Mint Dressing
- 1 c Olive Oil
- 1/4 c Fresh Mint, diced
- 1 1/2 T Red Wine Vinegar
- 1 T Honey
- Salt and Pepper to taste
In a large bowl, add all salad ingredients.
Mix well.
In a small bowl, add all dressing ingredients.
Add salt and pepper to taste.
