The Best Summer Shrimp Salad Recipe

This light and refreshing summer shrimp salad is perfect for outdoor dining. It’s healthy, delicious, and easy to make!

Ingredients
  

  • 3 c  Arugula
  • 2 c Shrimp, diced
  • 1 c Grapes, cut in half
  • 1 Avocado, diced
  • 1/2 c Pumpkin Seeds
  • 1 15 oz can Hearts of Palm, sliced

Mint Dressing

  • 1 c Olive Oil
  • 1/4 c Fresh Mint, diced
  • 1 1/2 T Red Wine Vinegar
  • 1 T Honey
  • Salt and Pepper to taste

Instructions
 

  • In a large bowl, add all salad ingredients.
  • Mix well.
  • In a small bowl, add all dressing ingredients.
  • Add salt and pepper to taste.
