Grilled Salmon with Avocado Mango Salsa

Ingredients
  

  • 4 Roma Tomatoes, diced
  • 1 c Mango, diced
  • 1 Lime, squeezed
  • 1 Scallion, finely chopped
  • 1 bunch Cilantro, chopped
  • Salt and Pepper to taste
  • 2 Avocado, diced
  • 1 Large Salmon filet
  • 1 T Olive oil

Instructions
 

  • In a medium bowl, add tomatoes, mango, lime, scallion and salt. Mix.
  • Add avocado. Mix.
  • Set aside to let flavors mingle.
  • Preheat oven to 350 degrees.
  • Place the salmon on a lined cookie sheet.
  • Drizzle with olive oil and season with salt and pepper.
  • Bake for 10-15 minutes.
  • Make sure not to overcook.
  • Serve Salmon with the Avocado Mango Salsa.
