Grilled Salmon with Avocado Mango Salsa

- 4 Roma Tomatoes, diced
- 1 c Mango, diced
- 1 Lime, squeezed
- 1 Scallion, finely chopped
- 1 bunch Cilantro, chopped
- Salt and Pepper to taste
- 2 Avocado, diced
- 1 Large Salmon filet
- 1 T Olive oil
In a medium bowl, add tomatoes, mango, lime, scallion and salt. Mix.
Add avocado. Mix.
Set aside to let flavors mingle.
Preheat oven to 350 degrees.
Place the salmon on a lined cookie sheet.
Drizzle with olive oil and season with salt and pepper.
Bake for 10-15 minutes.
Make sure not to overcook.
Serve Salmon with the Avocado Mango Salsa.
