How to Make a Delicious Roasted Sweet Potato Salad

This Roasted Sweet Potato Salad has all the best flavors of Fall wrapped in one delicious salad. Pecans, crisp apple, and maple vinaigrette make it irresistible!
A delicious and healthy salad perfect for Fall. Packed with roasted sweet potatoes, apples, kale, dried cranberries, goat cheese and pecans.

Ingredients
  

  • 3 Small Sweet Potatoes, peeled and diced
  • 2 Apples, diced
  • 1/2 c Dried Cranberries
  • 1/2 c Pecans
  • 1/2 c Goat Cheese
  • 1 T Olive Oil
  • Salt and Pepper

Dressing Ingredients

  • 3 T Apple Cider Vinegar
  • 1/4 c Maple Syrup
  • 1 T Dijon Mustard
  • 1 clove Garlic, minced
  • 1/3 c Olive Oil
  • Salt and Pepper to taste

Instructions
 

  • Preheat oven to 425 degrees.
  • Add diced sweet potatoes to a 9x13 baking dish.
  • Add olive oil and salt and pepper. Mix.
  • Bake for 30 minutes until tender. Let cool.
  • Add Kale, apples, pecans, cranberries and goat cheese to salad bowl.
  • When cool, add sweet potatoes.

Make Dressing

  • in a small bowl, add apple cider vinegar, maple syrup, dijon mustard, garlic, olive oil, salt and pepper. Mix well.
  • Pour dressing onto salad.
  • Enjoy!
