Ingredients
  

  • 5 small Sweet Potatoes, peeled and diced
  • 1 box Chicken Stock
  • 3 T Non-dairy Butter, divided
  • 1 1/2 c Carrots, shredded
  • 5 ribs Celery, diced
  • 1 T Dried Onion
  • 1 T Garlic, minced
  • 2 cans Coconut Milk
  • Salt and Pepper
  • 3 cans Clams, do not drain
  • 2 T Arrowroot powder
  • 1 c Bacon, cooked and crumbled
  • Fresh Chives, chopped

Instructions
 

  • In a large stock pot on medium high heat, add butter, celery, garlic and onions. Cook until aromatic.
  • Add clams, sweet potatoes coconut milk, chicken stock, carrots, bacon and salt and pepper.
  • Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
  • In a small bowl, add arrowroot powder and a tiny bit of water. mix well. Add to the chowder to thicken.
  • Add butter and chives.
  • Enjoy!
