Ingredients
  

  • 3 medium Sweet potatoes, peeled and diced
  • 1 1/2 T Gluten free flour
  • 2 c Non dairy Milk
  • 3 c Chicken Stock
  • 1 T Dried Onion
  • 1 t Garlic powder
  • 2 containers non dairy Cream Cheese, I like the Tofutti brand
  • 1/2 c Bacon, cooked and crumbled
  • 1 c Non dairy Cheddar Cheese
  • 2 T Non dairy Butter
  • Salt and pepper to taste

Instructions
 

  • In a stock pot, add sweet potatoes and flour. Mix well.
  • Cook over medium high heat.
  • Add milk, chicken stock, onion and garlic. Stir well. Cook until potatoes are tender.
  • Reduce heat to simmer.
  • Add cream cheese, bacon, cheese butter, salt and pepper.
  • Simmer for 20-30 minutes.
  • Top with fresh chives.
  • Enjoy!
