Ingredients
Butter

Eggs, beaten

Veggies-mushrooms, broccoli, peppers-whatever you have on hand-diced
1/2
c
Cheese or dairy free cheese
1/2
c
Bacon, sausage or ham-cooked and diced
1/4
c
Heavy cream or non dairy yogurt
Chives
Salt and Pepper
Instructions
Preheat oven to 350 degrees.
Butter muffin pan.
Dice meat, veggies and chives.
Mix all ingredients in a large batter bowl.
Pour mixture into muffin pan.
Bake for 35-40 minutes. Until golden brown.
