These easy to make, gluten free, dairy free Bacon and Mushroom Egg Bites are perfect for busy mornings.

Ingredients
  

  • Butter
  • 9 Eggs, beaten
  • 1 c Veggies-mushrooms, broccoli, peppers-whatever you have on hand-diced
  • 1/2 c Cheese or dairy free cheese
  • 1/2 c Bacon, sausage or ham-cooked and diced
  • 1/4 c Heavy cream or non dairy yogurt
  • Chives
  • Salt and Pepper

Instructions
 

  • Preheat oven to 350 degrees.
  • Butter muffin pan.
  • Dice meat, veggies and chives.
  • Mix all ingredients in a large batter bowl.
  • Pour mixture into muffin pan.
  • Bake for 35-40 minutes. Until golden brown.
